Gingerbread Man Cookies

These healthier cookies are sweetened with honey and molasses. They are so easy to make with just a few basic ingredients.

‘tis the season for cookies, baking, crafts, and giving!

My two year old has really been in the baking mood. In the morning she opens the cabinets and gets out ingredients before I make coffee. Today just the two of us made gingerbread cookies before everyone else woke up.

I highly suggest eating them with with your morning Coffee or afternoon Tea yummy! I was never a fan of Gingerbread men but I am really liking these!

I try make everything as healthy and natural as possible. Especially treats for my kids. Sometimes that can be difficult, but not with this simple recipe.

Molasses

Flour

Honey

Chocolate chips

Marshmallows

We decorated our gingerbread men with cut up marshmallow pieces and chocolate chips.

The classic icing recipe is also great with these as well. Simply mix 1/2 cup of powdered sugar with 1 tablespoon of milk. Add coloring or sprinkles.

Gingerbread Men Cookies

Molasses and Honey sweetened cookies.
Prep Time 10 minutes
Cook Time 15 minutes
Servings 9 Cookies

Ingredients
  

  • 2 TBSP Softened Coconut Oil, Butter, or Olive Oil
  • 1/4 Cup Molasses
  • 1/4 Cup Honey
  • 1 Large egg (I used 2 Small)
  • 1 1/2 Cups Flour
  • 1-2 tsp Ground Ginger
  • 1 tsp Pumpkin Pie Spice

Instructions
 

  • Preheat oven to 350°
  • In a mixing bowl, add wet ingredients and mix.
  • Add in remaining dry ingredients and mix until combined.
  • Grease your Baking Sheet, and spoon in mixture.
  • Bake for 15 minutes or until golden brown.

Notes

If you do not have a cookie sheet, this recipe may be too sticky o roll out. I would suggest placing the mixture in the refrigerator to stiffen up and then roll out in-between two pieces of parchment paper, then use your cookie cutters to cut out your shapes.
 
I like Gingerbread men to be slightly hard and thick, but if you like your cookies soft and fluffy, add 1/2 tsp baking soda and 1 more egg to the dry ingredients.
