Quick, Healthy, and Delicious Pumpkin Banana Breakfast Bars

Looking for a healthy, quick, and easy breakfast option? These banana-pumpkin oatmeal bars are a must-try!

Bananas and pumpkin might not sound like the perfect match, but when baked together with oatmeal, they create a truly irresistible combination.

These bars are the perfect base for a wholesome breakfast or a grab-and-go snack.

Here’s all you need to get started:

  • Bananas
  • Pumpkin purée
  • Oatmeal

Want to make them a little sweeter? Add a touch of natural maple syrup or honey for a guilt-free treat.

But why stop there? Add a bit of fun and texture to your bars with mix-ins like:

  • Raisins
  • Pecans or walnuts
  • Chocolate chips
  • Coconut flakes
  • Or any other goodies you love!

These bars are a staple in my kitchen because they’re not only nutritious but also incredibly easy to make. My family loves snacking on the leftovers—they’re perfect for a quick bite or even dessert!

For oatmeal, we like to use Bob’s Red Mill Organic Oatmeal. The large, clean oat flakes are perfect for this recipe. If I run short on oatmeal, I’ve even substituted with almond flour, and the results were just as delicious.

For the pumpkin purée, I use my homemade batch—it doesn’t get fresher than that! But store-bought purée works just as well, so use what you have on hand.

Our last batch got an extra fun twist with Lilly’s Unicorn Chips—a healthier, colorful topping that’s always a hit with the kids!

Banana-Pumpkin Breakfast Bars

Healthy, Quick, Easy, Delish!
Cook Time 30 minutes

Ingredients
  

  • 4 Banana's
  • 2 Cups Pumpkin Puree
  • 4 Cups Oatmeal
  • 1/4-1/2 Cup Maple Syrup or Honey How sweet do you want it?

Optional

  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • 1 tsp Ginger
  • 1 tsp All Spice
  • 1/2 Cup Nuts pecans or walnuts
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Coconut Flakes
  • 1/2 Cup Raisins

Instructions
 

  • Preheat oven to 375°
  • In a large mixing bowl, combine and thoroughly mix all ingredients together.
  • Grease a large casserole dish or cake pan.
  • Pour ingredients into the pan and bake for about 20-30 minutes or until the bars are firm.
  • Let cool for 10 minutes and Enjoy!
