Easy Banana Pumpkin Breakfast Bars
If your looking for a healthy, quick, and easy breakfast bar, check this one out!
Bananas and pumpkin don’t sound that appealing, but baked with oatmeal is a delicious concoction.
They are a wonderful base for delicious breakfast bars.
All you need is a few ingredients: Bananas, Pumpkin purée, and Oatmeal.
Want it to be a sweet treat? Add some natural Maple Syrup or Honey.
You could stop there, but why?
Make it a breakfast bar full of fun surprises with raisins, pecans, walnuts, chocolate chips, coconut flakes, or other fun things you want to add in!
I’ve made these bars quite a few times because they are so easy and nutritious. Also, my family loves to have the leftovers for an easy-to-grab snack or dessert.
For oatmeal we use Bobs Red Mill Organic Oatmeal. It has nice large clean oat flakes. Although, when running short on oatmeal I have substituted it with almond flour and the bars were still wonderful.
For the pumpkin puree, we use our homemade puree. I love the fresh stuff but you can certainly use what you have!
We topped our last batch with Lilly’s Unicorn Chips! Healthier and fun toppings are great <3
Banana-Pumpkin Breakfast Bars
Ingredients
- 4 Banana's
- 2 Cups Pumpkin Puree
- 4 Cups Oatmeal
- 1/4-1/2 Cup Maple Syrup or Honey How sweet do you want it?
Optional
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 1 tsp Ginger
- 1 tsp All Spice
- 1/2 Cup Nuts pecans or walnuts
- 1/2 Cup Chocolate Chips
- 1/2 Cup Coconut Flakes
- 1/2 Cup Raisins
Instructions
- Preheat oven to 375°
- In a large mixing bowl, combine and thoroughly mix all ingredients together.
- Grease a large casserole dish or cake pan.
- Pour ingredients into the pan and bake for about 20-30 minutes or until the bars are firm.
- Let cool for 10 minutes and Enjoy!
