Paleo Chocolate Pancakes
These are healthy, simple to make and are so yummy! Naturally sweetened by banana’s and can be easily made vegan. We added strawberries and walnuts and tried to shape them into a heart for a Valentine’s day inspired breakfast.
Also, we use a spatula or turner like this : HERE and highly recommend it! It does’t scratch up your pans and slips under pancakes nicely.
Paleo Chocolate Pancakes
yummy breakfast that is really like dessert.
Ingredients
- 1 Banana
- 1 Egg
- 1 TBSP Flaxseed meal with 3 TBSP water
- 3 TBSP Cacao powder
Instructions
- Step 1: In a mixing bowl, mash the banana with a fork.
- Step 2: Add egg and/or Flaxseed meal egg (see notes)
- Step 3: Add cacao powder and mix batter.
- Step 4: Heat coconut oil in frying pan on medium low heat than add about 1/4 cup batter for your pancakes. Cook about 2 minutes or until bubbling and flip to cook for an additional 2 minutes.
- Step 5: Take out of the pan and serve with your favorite topping. Enjoy!
Notes
Want to make it vegan or eggless?
This recipe calls for 1 TBSP flaxseed meal as an egg replacement.
You can make an egg replacement by adding 1 TBSP Flaxseed meal and 3 TBSP water in a small dish and let it soak for about 5 minutes. Then add the mixture to your recipe.
If you do not have flaxseeds for this recipe, just replace the 1 TBSP with 1 egg.
* Adding cut up fruit or coconut would be really tasty in this recipe!
We loved adding chopped up frozen strawberries on top of the pancakes. It adds color and pairs great with the chocolate. However, if you add frozen fruit to the mix it may get watery and harder to flip. Fresh strawberries cut up and added in the mix works great.
