Pumpkin Apple Fritters
I love apple fritters but I just can’t get myself to buy any because I know they can’t be that good for me.
However, I have really been craving a sweet crunchy apple fritter! I just had to make a healthier guiltless version.
I tried a few recipes and made Apple Fritters with Greek yogurt which was pretty good. This time I had fresh pumpkin puree’ on hand, and I thought WOW that could be a great Fall combination. I was right, this recipe is a winner! The pumpkin makes a nice smooth base and it helps keep the dough moist.
It isn’t as complicated as it sounds. I baked these in my toaster oven. As I fried up about 3 fritters at a time, I baked the previous batch. It only takes about 5 minutes to fry and 5 minutes to bake. So that worked out perfectly for me, but you may want to wait and bake the whole batch at once.

Pumpkin Apple Fritters
Ingredients
- 4 Apples
- 3 cups Flour
- 1/2 cup Stevia in the raw or Sweetener of choice
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 2 cups Pumpkin Puree'
- 1/2 cup Milk
- 2 Tbsp Apple Cider Vinegar
Glaze
- Honey or Maple Syrup
Instructions
- Heat oven to 400°
- Core and cut apples into little 1/2" pieces.
- In a frying pan, on medium heat, cook the apple pieces with a little cinnamon for about 3 minutes or until tender.
- In a large bowl, mix dry ingredients.
- Fold in the wet ingredients and the cooked apple pieces until well combined. The texture should be like a thick pancake batter. If its too runny add a little flour, if its too dry add a little more milk.
- In your frying pan, heat about 1/3 cup of olive oil to medium high heat.
- Add about 1/2 cup of batter to your hot oil (your fritter) and fry. Cook until golden brown and flip like you would a pancake. When done place your fritters on a cookie sheet or silicone mat. Continue this process for the rest of your fritters.
- Bake your fritters at for 5 minutes.
- Remove from oven and add a glaze. I used a little honey on top of each fritter.
- Let cool and Enjoy!
