Paleo Keto Pumpkin Snickerdoodles

Everything is pumpkin flavored for me this fall and I’m loving it. These are tasty cookies that are healthy too. These are cookies the whole family can eat and feel good about because they are grain and refined sugar free. Coconut sugar and maple syrup are used in this recipe but not much at all.

Do you have one of these yet? I’m a huge fan! Awesome alternative to nonstick but if you don’t just grease a baking sheet in this recipe.

Paleo Keto Pumpkin Snickerdoodles

Yummy healthy cookies you can eat for dessert, breakfast, or snacks.
Course Dessert

Ingredients
  

  • 1/2 Cup Pumpkin Puree
  • 2 Eggs
  • 2 1/2 Cups Almond Flour
  • 1/4 Cup Maple Syrup Yacon Syrup for keto
  • 1/2 tsp Baking Soda
  • 1 tsp Pumpkin Pie Spice
  • 1/2 tsp Cinnamon
  • 1/4 Cup Butter

Topping

  • 2 Tbsp Coconut sugar monk fruit or xylitol for keto
  • 1 tsp Cinnamon

Instructions
 

  • Step 1: First, preheat oven to 375°. Meanwhile, add all ingredients in a mixing bowl and mix until combined evenly.
  • Step 2: Mix the cinnamon and sugar topping in a seperate bowl.
  • Step 3: Scoop and make little 1 Tbsp balls of dough.
  • Step 4: Roll the balls of dough in the cinnamon and sugar topping. Skip this step if you want to cut back on sugar and sprinkle it on top of dough after step 5.
  • Step 5: Slightly flatten the balls on baking mat or greased cookie sheet.
  • Step 6: Bake for about 15 minutes the cookies should fiorm up and start to crack.
  • Step 7: Let cool and serve!
