In a frying pan, on medium heat, cook the apple pieces with a little cinnamon for about 3 minutes or until tender.
In a large bowl, mix dry ingredients.
Fold in the wet ingredients and the cooked apple pieces until well combined. The texture should be like a thick pancake batter. If its too runny add a little flour, if its too dry add a little more milk.
In your frying pan, heat about 1/3 cup of olive oil to medium high heat.
Add about 1/2 cup of batter to your hot oil (your fritter) and fry. Cook until golden brown and flip like you would a pancake. When done place your fritters on a cookie sheet or silicone mat. Continue this process for the rest of your fritters.
Bake your fritters at for 5 minutes.
Remove from oven and add a glaze. I used a little honey on top of each fritter.
Let cool and Enjoy!

These are even better cooled down to room temp or refrigerated.
