This past Father’s Day, my kids and I decided to a make a special breakfast for my husband.

Cinnamon Rolls had to be on the menu!

We normally like to use this Healthy Cinnamon Mini Rolls recipe found HERE because its quick, but this time I wanted them to be fluffier and airier. So we made a similar batch, but with yeast and sour cream.

Although it does take longer than our Healthy Cinnamon Mini Rolls, they are worth the wait!

We used sour cream to create a smooth and doughy batch of rolls while using whole wheat flour. We also just happened to have a batch of homemade sour cream. (I seen an easy recipe to make your own sour cream and we had to try it out. It wasn’t quite what I expected, but it worked.)

Here’s the recipe we used if you want to try it:

DIY Sour Cream

Easy and with only a few everyday ingredients. This sour cream doubles as a fun, safe, and edible experiment.
Prep Time 2 minutes
Resting Time 1 day
Course diy

Ingredients

  • 2 C Cream We used the cream of the top of farm fresh milk, but heavy cream from the store will work.
  • 1/2 C Milk We used whole milk.
  • 1/4 C White Vinegar or Lemon juice

Instructions

  • Whisk everything together in a bowl.
  • Cover with a cheese cloth, towel, or paper towel. Something breathable and that keeps it clean.
  • Let it rest for 24 hrs at room temperature.
  • Separation will occur. Depending on thickness, you can stir it all together or if there's a lot of liquid you can scrap off the creamy top layer and pour out the liquid below. We scrapped off the top layer and used that as our sour cream. Perfect consistency and tasted similar to the store bought.
  • Great Job! What do you think about that?

Equipment

  • Stand Mixer

Ingredients

  • 1/2 C Warm (not hot) Water
  • .5 OZ Yeast
  • 1 TBS Maple Syrup
  • 1 C Sour Cream
  • 3 C Flour We used Whole Wheat
  • 2 tsp Baking Soda
  • 2 T Softened Butter or Coconut Oil

Instructions

  • In a bowl, add warm water, yeast, and maple syrup. Let it sit and bubble for about 5 minutes.
  • Add all dough ingredients to the the mixing bowl and mix until blended together.
  • Using a dough hook or hands, knead the dough for about 5 minutes. (The dough should stick together but not stick to anything else, if its too sticky add a bit more flour. If its crumbly add a bit of milk or water, )
  • Take your dough ball and roll it out to about 1/4 inch thick.
  • In a bowl, add 2-3 T Sugar, 2 T Cinnamon, and nuts, raisons, or fruit. Mix together.
  • Sprinkle your cinnamon mixture on top of the rolled out dough. Leaving 1/2 inch around the edges free to allow it to stick together.
  • Carefully roll up the dough.
  • Cut the desired thickness of your rolls. We cut about an inch for each roll.
  • In a greased casserole dish or on a baking sheet, place your rolls spiral side up.
  • Cover with a towel and let rest for 20 minutes.
  • Preheat oven to 350°
  • Bake your rolls for 20 minutes or until firm.
  • Add a topping. We drizzle honey or Maple syrup on top before serving. You can also make an icing with 1/2 cup powdered sugar and 1 T milk. adding milk to soften and powdered sugar to thicken as needed.
  • Enjoy!
