Coconut Flour Pancakes
It’s hard to find good recipes with coconut flour but this one is great! So, you might want to double the recipe on this one. These are not too dense, they actually turn out to be nice and fluffy. Made with only a few ingredients, you can whip these up real quick for breakfast.

Coconut Flour Pancakes

Ingredients
- 1/4 Cup Coconut Flour
- 1/4 Cup Milk of choice
- 3 Eggs
- ½ tsp Cinnamon
- ½ tsp Vanilla
Instructions
- Add all ingredients in a mixing bowl and mix until combined.
- Heat butter or oil (I used coconut oil) in frying pan or skillet on medium.
- Drop about 1/4 cup of batter into pan and cook until it starts to bubble and firm up on the sides.
- Add berries, raisins or chocolate chips if desired, flip and cook until golden brown.
- Serve with your favorite toppings.
